First off, I am sorry that this installment of My Keto Journey is delayed, I was due to restart my Keto diet after the festive break on Monday 4th January 2020 however… I started experiencing symptoms of COVID-19 on Sunday 27th December and tested positive for the virus on the 30th December.
I wanted to take a paragraph to talk about my Coronavirus experience, in the hopes it will distill myths and help others. Since the beginning of the pandemic in the UK I have been working full time supporting our wonderful front line workers – naturally we have been very careful ensuring social distancing, regular hand sanitizing and mask wearing. I have taken every precaution to prevent exposure to the virus and we adhered to all lock-down rules and regulations. To this day we still do not know how I was exposed by my household was exposed at the same time as we all came down with the virus with a day of each other.
I experienced what I can only describe as the worst symptoms of flu I have ever felt. I had sneezes, runny nose, sore throat – all of these were mild in comparison to the fever, aches and pains, fatigue, coughing and breathlessness I also experienced. Throughout the course of the virus taking hold, I had extreme sinus pain and headaches. We self isolated for the full ten day period and then an additional couple of days as we were still feeling unwell. It was only after two weeks had lapsed that we started to feel better and finally after three weeks that I felt I was able to return to work safely. Over the course of the virus I lost a further 5kg in weight through not eating as it was too painful to swallow or we just had no appetite.
My COVID-19 experience was awful, however I consider myself extremely lucky as others we have known ended up in hospital with troubles breathing. So please, stick to the rules – you do not want COVID-19, its very real and very debilitating.
I was actually excited to restart Keto – I missed the delicious meals and the strict planning of nutrients so I kicked off again on Monday 11th January 2021. My first Keto meal of 2021 was a delicious Pork Chop with Cabbage Casserole (recipe courtesy of Diet Doctor).
I also thoroughly enjoyed a Keto friendly Mushroom Omelette with Courgette fries.
I entered Ketosis after day 2 and I haven’t experience the Keto Side Effects that I had when I first started Keto, which is wonderful. It’s great to be back!
