It’s Friday and this week has been tough. It’s been a busy week at work, which means I have been finishing later which has given me less time to enjoy and prepare my meals, it was also tempting to pickup a takeaway on the way home as when I’m tired, the last thing I want to do is cook. My willpower was very strained but I didn’t stray from the path and instead found some delicious easy and quick Keto friendly meals.
Keto Asian Beef Salad
This salad was super quick and easy, using a delicious rump steak, it was prepared and ready within 15-minutes. I like my beef rare, however for a salad I find it best to cook medium-rare and let rest for 5-minutes before slicing. The dressing was fresh and zingy and really complimented the beef. I opted for a mixed baby leaf salad instead of just lettuce and the rocket gave a delightful peppery punch.
Pizza (Keto friendly)
Pizza and Keto are 100% not compatible, the carb-loaded delicious disc of tomato, cheese and toppings is probably one of the ultimate Keto no-no’s. But Pizza is also one of my favorite foods and I have missed it so much (it was the first meal I had when I paused my Keto diet for Christmas).
Fortunately the wonderful Lo-Dough have created a Lo-Dough Base with just 2.2g net carbs. I made my own tomato sauce so I could control the ingredients using cherry tomatoes and topped with mozzarella and delicious Nduja salami spread.
Keto Pizza

1 Lo-Dough base
- Tomato sauce
10 cherry tomatoes
1 tsp tomato puree
1/4 tsp erythritol
1/4 tsp vegetable stock powder
50 ml water
- Toppings (your preference, keep it Keto)
2 tbsp grated mozzarella
5 large green olives (pits removed)
20 g DO YA? Nduja sausage
Directions
- Pre-heat your oven to 200°C. If you have a pizza stone, it works wonders so preheat with your oven.
- Chop the cherry tomatoes into quarters and add to a saucepan with water, tomato puree, stock powder and the erythritol. Bring to a gentle simmer and stir occasionally until the tomatoes break down and the sauce thickens. Remove from the heat and let it cool slightly.
- Take your L-Dough base and spread tomato sauce edge to edge.
- Top your pizza as desired.
- Bake in the oven for 7-9 minutes until golden.
Haddock and mushroom bake
This week has been freezing cold and I really fancied something warm and comforting. I made two portions and kept the second portion for lunch a couple of days later (simply reheating in the oven was super quick).
I used frozen fish fillets to keep the cost down but still packing flavour while the creamy mustard sauce was just so delicious. A simple dinner.
Sushi Take-out
I was working late and didn’t prepare in advance however a new Sushi bar opened up nearby so I ordered my favourite Keto friendly Japanese dish, Sashimi. It was incredible, and I feel I may become a regular soon…
