It’s been a busy week at work and long days are not conducive to home cooking. Even the most meticulously planned meal plan can sometimes go awry, especially when I forgot to add one of the main ingredients to our grocery delivery, but fortunately I had backup Keto friendly foods in the freezer.
Weight loss this week plateaued for the first few days, but picked up again soon after. I have a feeling that a few too many martinis last weekend may have knocked me out of ketosis, but my testing strips have been delayed so I haven’t been able to check. I’ve lost 2kg this week which is my lowest weekly loss, however it’s still going in the right direction!
This week I also started fasting mid-week, running 21:00 – 12:00 limited myself to just water and black coffee during the fast. I break my fast at work with lunch and enjoy a normal dinner – this has been difficult but as I write this I can already see the huge benefits coming… more next week!
Keto Okonomiyaki
Recipe via Ruled.me
This super-ugly dish was incredible. I love Japanese food and have craved it almost as much as I craved Pizza. This stuffed omelette style dish is topped with delicious dried fish flakes (Bonito) and seaweed and swirled with a Keto friendly Japanese style mayonnaise. I even had some authentic Japanese Tonkatsu sauce in the cupboard for that BBQ flavour kick, but used it very sparingly due to the high sugar content.
Salmon with Cowboy Sauce
Recipe via Diet Doctor
Salmon is a real Keto staple. It is high in fats and makes a great and easy dinner, it’s even more tasty when fried in butter – it featured on my meal plan twice this week. Salmon has a delicious flavour and you don’t want to overpower it, so I was skeptical with the big and bold flavours in the Cowboy sauce but… it worked a treat and was very delicious. Diet Doctor also have a recipe just for the cowboy sauce as it makes a great Keto condiment.
Bacon Burger Casserole
Recipe via Diet Doctor
Sometimes, you just need meat and cheese and this bacon-laden burger casserole really delivers – and it tastes just like a cheeseburger without the carb-loaded bun. Loaded with chopped tomatoes, pickles and a creamy cheese sauce, it’s super simple to prepare. Watch out as it is very high calorie, so works really well after breaking a fast!.
